What is one loading metre?

It is one metre of trailer length using the full usable width. A shipment using half the width for two metres also consumes one loading metre.

Do stackable pallets use fewer loading metres?

Yes, when stacking is physically and commercially allowed. Divide quantity into floor positions using the number of safe stack levels.
